The Clare is a Paradise Grapevine house favourite. According to Damon Koener the wine can be summarised as Bordeaux varieties made in a Loire style - vibrant, bright fruits & soft tannins. Vine ages range from 23-92 years and all come from ‘Terra Rossa’ (red clay on limestone) soils. The fruit is entirely destemmed, naturally fermented in open-top steel fermenters and hand plunged twice daily. Free run and pressed wine is combined in the total blend which is aged out in Slavonian foudre for 9 months before stainless steel for a further 3 months.
