Medium bodied, red berry fruits and earthy spice tones. The blend is harvested in mid-late March and entirely destemmed into open-top stainless steel fermenters. The cap management is gentle with twice daily hand plunges and a 2 week skin-contact. The wine is then pressed and settled off gross lees for 7 days before riding out it's life in Slavonian oak foudre for 9 months.
