100% Grolleau hand-harvested from old-vines planted in 1958 and 1959 on schist and clay bedrock.The grapes are macerated in whole bunches for about 10-15 days depending on the vintage. They use a slow vertical press, and the wine is an assemblage of free run juices as well as macerated juice. Aged for a short time, 5-6 months on fine lees in fiberglass. The epitome of the convivial nature of the wines of Babass, with its low avb (at 10.5% but feels much lower around 8%) and its intense mineral nature. By no means a simple wine for quick consumption, even though it’s extremely tempting to drink fast. Smoky minerality from old vines with crunchy berry-driven fruit, and a mineral water quality to the palate. A captivating ride.
