A new cuvée, the result of the 2021 vintage where no grapes were harvested due to unfavorable weather in their vines. The risk that winemakers run, by having all their parcels grouped closely together, but luckily thanks to their neighbor Hugues of Domaine du bon Temps, they were able to access organic fruit. A blend of 80% Grolleau and 20% Cab Franc. Made in the same way as all the reds with whole bunch maceration for 10-15 days, and a slow vertical pressing, with the final wine a blend of free-run and macerated juice. 8 to 9 months aging in fiber tank. Very well within the style of Babass’ reds with its mineral edge, and light, bright, and crunchy fruit. More acid driven than Groll n’ Roll, with its fruit leaning more in a red-fruit direction, and beautiful light texture on the palate. A true all occasions red that’s undeniably Babass.
