2020 Golden Hour

Golden Hour encompasses all of our most experimental and unpredictable winemaking techniques in one enchanting blend. The total skin-contact time ranges from 10 (Sauv Blanc) to 156 days (Chard & Riesling). Some wonderful things happened over that time, we found that slowly macerating white grapes without any mechanical agitation was more akin to steeping tea - the extraction is long and gentle, produces a plethora of different flavours and builds texture within the wine. The Chardonnay Musque, a funny little variety that we didn’t know much about, was riddled with botrytis (Noble Rot) - a divisive fungus that shrivels up the grapes on the vine. Inspired by the highly oxidative white wine of the Jura region in France, we decided to fill these barrels 2/3 full, lock them up and allow the wine to slowly interact with oxygen. The result was our favourite barrel in the cellar, a mind-bendingly complex plethora of honied fruit and savoury treats.
Golden Hour is a textural orange wine, savoury in nature, extremely complimentary to hard cheeses and fruit, and best drank ice cold this time of year. Expect wildflower honey, macadamia, Ontario paw-paw and mango lassi. This wine is ready to go now, however for those of you building a cellar we think that this wine will only become more majestic with age.
